Hearty breakfast of yummitude

I've been enjoying these sourdough english muffins from Dam Good that I get from FreshDirect (and since I looked up their site, I see more flavors and am trying not to get tempted to order from them). I usually dislike english muffins they they always seem to be dry and bland but these are absolutely delicious.

I've been adding Impossible sausage on them that I fried up in batches of patties and then microwave for 40 seconds with a paper towel to soak up extra grease. This morning I took it a step further and put on a Just Egg patty.

Vegan McMuffin for the WIN. I am pleasantly full. And since I did my best to remove extra grease, it didn't feel too heavy.

That looks delicious! I love the Just Egg patties + Impossible (or Beyond) sausage for a bfast sandwich. This makes me want to make biscuits. :D

I've been having issues with SO much tummy acid lately but none of these ingredients seem to bother it which is another win. I've also been trying to think of some drinks to get that are both low-acid and not carbonated. I'm going to get some Honest Kids cherry drink since it's also not as sweet as other drinks. I am getting bored of drinking plain water.

LOL I know. My guess is that the Advil/Tylenol that I've been taking for the back is finally upsetting the stomach. I've weaned down to two pills a day and the symptoms are starting to improve.

I'm better off than poor Emily who her third round of test results finally show she has Covid and it's starting to knock her on her butt. It doesn't help that her already fragile Mom wasn't doing well at all this week and they thought they'd have to send her to the ER. (and that her shitty sister isn't helping enough after she and her kids infected Emily and her Mom and now her sister is going to a show in NYC this weekend GRRRR) I'll be picking up Sunday newspapers and pastries for them tomorrow morning and dropping them off on their porch.

Sadly, there isn't anything that can be done, but I sure wish there were some legal options to make the sister cease and desist.

The Impossible sausage comes in tube shapes. I haven't seen them many places but if you see them, grab them! The spicy version does have a bit of a kick but it isn't TOO bad
