Sometimes random suggestions from YouTube make for some new favorites. Since I watch videos from channels like Strictly Dumpling, Peaceful Cuisine, and TabiEats (they are so cute), it suggested videos from Seonkyoung Longest one of which was this little gem:

Since I had some slaw mix on hand, I made it for breakfast this morning and HOLY MOLEY I think I have a new favorite breakfast. I did make some modifications mostly based on what I had on hand but some also due to preference:
Unbuttered, toasted sourdough instead of white bread (might lightly butter it next time but not a big deal)
No ham (didn't miss it at all)
Thin sliced monterey jack instead of American 
Much less sugar, mayo and ketchup. 
No onion or scallion 
One egg and some egg whites - I made enough for only one portion, obviously

Surprisingly, I may add a smidge more sugar next time and I might get some scallion for more flavor but other than that it was delicious. I'm always looking for ways to eat more veggies at breakfast and the lightly crunchy slaw was perfect. It would also make for a good diner-style omelet for less carbs (they cook the veggies in most of the time instead of making a pocket for the veggies like I usually prefer)

Looks intriguing! Coleslaw on sandwich can be delightful, although I admit I never tried it for breakfast!

I'm thinking I may have to check out the different Asian mayo to get the full experience.

This makes me also want to try it as an omelet and also add in stuff like shiitake mushrooms - like a breakfast egg foo young.

It was soo good. Also, it was nicely cheap to make yet healthyish with the veggies so it'll definitely stay in breakfast rotation.

OMG! this looks awesome! I need to pick up some slaw ingredients and make this. Is the sugar noticeable? That part does seems odd but I do usually put a little sugar in cole slaw so I guess it is the same idea. I think adding a bit of sriracha would be great too.

I thought that about the sugar too but it really adds a little something extra. I also finally tried it with the ham and eh, that part I can take or leave. My sub to use thin sliced sourdough bread is so good. I've had this sandwich the last several mornings after posting this and it hasn't gotten old yet.

Sriracha would be pretty awesome - they DO sell sriracha ketchup, y'know ;) Or hm...even some chopped up peppers of some sort in with the slaw would be good. The texture combination of the slaw and then the creamy cheese and toppings really are what make this sandwich unique and awesome.

Yeah, I don't ever buy plain white bread ( well except to make Thanksgiving stuffing!) so I would be using some other type of bread too.

I have not had sriracha ketchup but mixing up my own should be easy. I agree other veggies would be good too.
