WFH and soupy soup
4 August 2023 13:09I didn't sleep well at all last night. My back wasn't overly bad but it was still difficult to get settled down and comfortable and my brain wouldn't wind down so I had to resort to chemical means at 3am and knew that I was going to WFH today. I was awakened by JuneBug at 7 who was going to diiiiiie if she didn't get treats. Little goober.
I didn't bother to email Bosslady to let her know since she's on vacation and it's not like she ever comes to our office even when she is in. I've actually got a metric ton of work done this morning and even had an extended phone call with my counterpart in Extension. It was also a good thing I did choose to WFH since they're exhuming massive stumps right at the entrance/exit to our apartment lot. Monday and Tuesday they had chopped the trees down but there was no notice about today.
I think that they're done since there's no more sound but while I wanted to go to the farmers market, I'm just not feeling up to it. Physically I'm better but I'm just feeling cloudy and BLEH. That's fine, though, since tomorrow I do need to make the rounds to get some food. Lately I've been all about soup which seems odd in summer since it's not cold soup that I want. This soup that I got last week was phenominal

However, it was also stupidly expensive. Then I had a thought. Emily turned me on to this premade Chicken Asada from Trader Joe's and many of the ingredients are the same and it's also delicious. I have some of the TJ's roasted corn in the freezer so I get some broth and some cayenne (for some reason I don't have any which I was surprised to find), I have garlic and smoked paprika so I could essentially just recreate it and have lots more of it for what I paid for the small container I bought last week. I might get some baby spinach to toss in because one can never have too many veggies. Speaking of veggies, I'm hoping come fall when I have more energy than to cobble together soup with precooked ingredients, I want to start easing back to mostly vegetarian.
I'm hoping TJs has some local tomatoes since that's what I was pondering venturing out for today. If not, I'm sure they'll have some nice fresh ones since they're in season. Kind of also craving a tomato sandwich on some grainy or the pumpernickel bread that I have in the freezer. I haven't had one of those in years.
