I’ve started veggie month and will try to do a decent amount of vegan days. Meatless Monday is easy to remember and since today is Monday, no better place to start. It was also helpful to bake and cook since it's still darned cold.
Breakfast - baked oatmeal (apples, oats, flax seed, coconut milk, almonds, cinnamon, nutmeg, maple syrup, agave). Delicious and I have two more servings for the next couple of mornings.


Lunch - whole grain sourdough with hummus, avocado, roasted red pepper, black olive and sprouts. Freaking YUM


Dinner - a Beyond Burger with Just Mayo (the bun could possibly have dairy but I'm not getting nuts about this) and vegan chili made with gardein crumbles. I have an absolute vat of the chili for this week. Hopefully I don't get too sick of it. 


Hopefully it wasn't too many calories since I am trying to lose weight here but at least I'm not regretting the veggie eating choice.

Unfortunately right now I don't have much of a voice at all. The sore throat started yesterday and I go back to work tomorrow where it'll be insane. Greeeeat.

37.4 here; it was hitting 100kg weight that made me think "sort your life out"...

The lunch sandwich looks really good. So does the baked oatmeal, but I can barely make instant coffee in the morning.

Since you are just starting out, I wouldn't worry too much about dairy or eggs in baked goods or other complex, but healthy, foods. (Says the person who is stuck at semi-vegetarian.)

Thanks - I'm going to work on mixing up the types of carbs. That and I don't want to be consuming TOO much soy-based protein.

Have had my space heater running at work for over an hour and it's still frigid. What a welcome back. Bleh. lol

Thanks! I have Burts Bees honey and menthol cough drops and peppermint tea which I'll put honey in.

I am SO making the oatmeal bake again. I think next time I'll toss in some blackberries and/or cranberries. It's nicely satisfying. It's supposed to get even more cold this weekend so it'll keep the place cozy and smelling good to boot.

Burt's Bees is the bomb. I use so many of their products! And I drink peppermint tea all year 'round cuz it's good for the heart, so why not :) Plus it's totally delicious!

Mmm yes blueberries and cranberries could only make it better :D your place is going to smell amazing...do you live in an apartment? If yes all your neighbours will be hanging around your door drooling lol

Dang, those are some good eats! I need to start cooking in larger volumes again.

My throat started hurting in the wee hours too. It hurts when I first wake up most of the winter. Try not to talk too much and communicate with wild hand gestures instead.

They are very good. I'm doing leftovers of the chili for lunch at work today in my little mini crock pot and am adding in some pasta to make it good and belly-filling.

I'm anticipating my office neighbor not respecting the fact that I'm not talking much by expecting me to answer her when she yells from her office (she has an inability to stop talking). Since I also won't be getting up to go answer her, she'll have to get used to silence as response. If she wants a question answered, she can get off her chair and come over.

Happy New Year!

I pretty much abandoned LJ in 2017 and have decided that while I probably won’t end up posting much I want to at least get back into reading the journals of the few people on my friends list who are still active.

It’s funny. I really do not like oatmeal made on the stovetop. I tried for years to add fruit and other things to try to get me to like it. Then maybe a year ago I made a baked oatmeal and LOVED IT! Why did I not find that sooner. Yours looks great!
